Teriyaki Chicken Stir Fry (Salt & Lavender)
Ingredients:
- 2 chicken breasts or plant-based alternative, chopped into 1-inch pieces
- 1/2 tsp garlic powder
- Pepper to taste
- 3 tbsp cornstarch
- 3 tbsp olive oil
- 1/2 medium chopped onion
- 2 cups chopped broccoli florets
- 1/2 chopped red bell pepper
- 1 cup uncooked rice
Sauce ingredients:
- 1/4 cup packed brown sugar
- 1 tsp fresh ginger grated
- 2 cloves minced garlic
- 3 tablespoons mirin
- 2 tablespoons soy sauce
- 1 teaspoon rice vinegar
- 1/2 cup chicken broth or vegetable broth
- 1 tablespoon cornstarch
Directions:
- Combine all sauce ingredients into a bowl and whisk. Chop vegetables.
- Cut chicken into pieces and add pepper and garlic powder. Stir together in a bowl and add cornstarch, stirring again until fully coated.
- Add 2 tbsp oil to a pan, allowing the pan to heat up over a medium-high setting. Add chicken to pan, cooking for roughly four minutes on each side until brown.
- Add in vegetables and cook for three minutes. Add chicken back to pan and stir with sauce until coated. Serve with rice or noodles.
Creamy Vegan Pasta (Love and Lemons)
Ingredients:
- 2½ cups small shell pasta
- 1 tbsp olive oil
- 1 small chopped yellow onion
- 5 cups chopped broccoli (stems and florets/leaves separate)
- ¼ cup toasted pine nuts (optional)
- Lemon slices (optional)
- sea salt and freshly ground black pepper
Sauce ingredients:
- 1½ cups cooked white beans, drained and rinsed
- ¼ cup vegetable broth
- 3 tbsp lemon juice
- 2 tbsp olive oil
- ¼ cup nutritional yeast
- 1 minced garlic clove
- ¼ tsp onion powder
- ½ tsp sea salt
- freshly ground black pepper to taste
Directions:
- Combine sauce ingredients and blend together.
- Prepare pasta according to package directions.
- Heat one tbsp of olive oil in a pan over a medium stove setting. Add onion and sauté for about five minutes. Add broccoli stems and cook for around 4 minutes. Add the rest of the broccoli and another splash of broth or water. Remove heat and cover.
- Allow to steam until broccoli is tender, then add pasta. Add sauce, season to taste, and serve with lemon slices and nuts if desired.
One-Pan Chorizo, Tomato, and Basil Pasta (Taste Australia)
Ingredients:
- 1 tbsp olive oil
- 1 chopped red onion
- 2 sliced chorizo
- 3 garlic cloves, crushed
- 375g penne rigate
- 420g pasta sauce
- 2 cups chicken or vegetable stock
- 1/3 cup chopped fresh basil leaves
- 2/3 cup grated cheddar cheese
- 1/3 cup basil pesto
- Basil leaves
Directions:
- Preheat oven to around 375 degrees. Heat olive oil in a flameproof baking dish over medium-high settings before adding in sliced chorizo and chopped onion. Cook for about five minutes, stirring periodically, and then combine with garlic.
- Remove heat. Add sauce, pasta, basil, and stock. Season to taste and add cheese.
- Cover with foil and bake for about half an hour; remove foil, and bake another fifteen minutes and allow to cool.
- Add pesto on top of baked dish and serve with basil leaves.
